My first thoughts on what I'd want to create an animated documentary about:
History
Myth/Legend/Folklore
These thoughts then formed into more specific ideas of either looking into the role of the storyteller throughout different cultures and how this has changed over time or making a documentary on the lives of the Brontë sisters. For my storytelling idea I think the style would change with whichever culture it was focusing on within the narration, similar to The Secret of Kells being animated in a similar style to the illuminated Book of Kells and The Tale of Princess Kaguya having visual similarities with Yamato-e art. So if the narration was talking about Viking Skalds for example, the animation would change to represent the art from the Nordic art we have left from the period.
For the Brontë Sisters documentary I think a style like that of the graphic novel Through the Woods by Emily Carroll would work well with their life stories. Their books were dark and brooding and a lot of their life setting was bleak so I think the dark and texture-full style of Through the Woods would match the tone.
After discussion with the class I'm also interested in the documentary ideas of exploring dreams and people's experiences with aliens, I think they could be really fun to make and work well with the animated medium as neither have existing footage and will be based on description from memory.
